Internist, Driver, Shopping, Wilderstead,

Is it me or what? I am getting a tad tired of visiting doctors who say "nice seeing you, don't know anything, good bye". Which is basically what happened today. My haemoglobin was apparently fine and they really don't know why it was so low. If I feel unwell, come back. Only thing is, I didn't feel unwell before when they discovered I was anaemic. One possible difference is the fact that my leg problems seems so much better, not cured by any means. So he said if they get bad again, come back.  About the only clue, I didn't feel especially tired or anything else.

We had a ride to the hospital appointment again and found a driver who is interested in cooking and we talked, guess what, Instant Pots. He and family have a 6 qt. He was telling me he made ribs a lot. Turns out he lives only a kick and a spit from the asparagus farm and knows Tim Barrie, the farmer, very well. Small world. Jokingly told him he can pick up my asparagus for me! Whenever it grows that is. Actually today was a lovely day and the temps are supposed to be warmer although not 20°C which is what Tim said.

The driver's daughter and husband have a website and publish YouTube videos. Wilderstead is their home. Haven't really checked it out yet but I gather they are planning to live "off  the grid" one of these days. There is a video about maple syrup and tapping the threes. The driver said now they were going to be tapping the bark? Never heard of that.

Went to get groceries this afternoon. Went upstairs into the store, got a few more produce items and then went back to the car. Couldn't have done that a few weeks ago. So if you hear me yapping about my bad legs and how I can't walk, remind me about the first paragraph in this blog will you? I also walked around the liquor store too. I think I bought the store whilst I was at it. Told the check out I would have to take out a bank loan. We were out of everything.

This is one of my favourite things to do with asparagus, make pesto. It keeps in the freezer for ever. It is absolutely delicious. Obviously you can use it for anywhere you would use other Pestos.

Asparagus Pesto Toasts

1 lb trimmed green asparagus
1 cup toasted walnut halves (I used pecans)
4 cloves garlic, peeled
2 1/2 tsp salt
3/4 cup olive oil
2/3 cup freshly grated Parmesan
Freshly ground pepper

1. Cook asparagus until just tender. Refresh in cold water, then drain and dry well. Place asparagus, walnuts, garlic and salt in food  processor. Process until blended.

2. With motor running, gradually add olive oil, then add cheese and pepper. Blend together and check seasoning. Place in covered bowl.

3. It shows the recipe served on crunchy toasted French or Italian bread with a curl or two of parmesan on top and some asparagus at the side.

4. We freeze this in ice cube trays, then wrap the cubes in pairs (separated by Saran, and put in a bag in the freezer until we need them.

  2. SO glad you feel better!! Just bought a small TENS unit but will have my PT guy tell me how to adjust it because it feels like needles instead of relaxing so far!
