Life in our Neck of the Woods,

Sorry no post yesterday, I am still feeling like a wrung out limp rag. We did go bowling for a couple of games today, not bad although my scores were pitiful. However, you could probably knock me over with a feather. Our team is still in 6th place but my average went down because my bowl aheads are not terribly good.

Much to our surprise we have some railings. Not the whole thing yet, but it's a beginning.

This picture looks like it's snowing, it isn't, it's all the dust, concrete and/or paint on our windows. The bottom half has to be filled with panels and the top with perspex or whatever they are using.

This is from the balconies across from us last year to show you what we will end up with. Hopefully with clean windows too.

Weird thing happened this morning, I was sitting at my desk working on my computer when my camera suddenly turned on, the flash went off and then it turned off again. When I checked, no photo had been taken. I have no idea what or why this happened. Most peculiar.

I wasn't going to include a recipe today as I am feeling so tired, but then I came across this one and thought it would be a good one to include. I've never made meatballs, maybe I should give it a go.

Ginger-Chicken Meatballs with Chinese Broccoli

1 garlic clove, finely grated
1 lb ground chicken
1 Tbs reduced-sodium soy sauce
2 tsp finely grated ginger
4 scallions, thinly sliced, plus more for serving
2 cups low-sodium chicken broth, divided
2 Tbs vegetable oil
1/2 bunch Chinese broccoli, chopped
1/2 tsp crushed red pepper flakes
Kosher salt, freshly ground pepper

1. Using your hands or a rubber spatula, gently mix garlic, chicken, soy sauce, ginger, 4 scallions, and ½ cup broth in a medium bowl just to combine. Scooping out by the tablespoonful, form mixture into 1”-diameter meatballs.

2. Heat oil in a large skillet over medium-high heat. Add meatballs and cook, turning occasionally, until golden brown all over, 8–10 minutes. Transfer to a plate.

3. Combine broccoli and red pepper flakes in same skillet, season with salt and pepper, and cook over medium-high heat until broccoli is bright green and crisp-tender, about 5 minutes. Add meatballs and remaining 1½ cups broth. Bring broth to a boil, reduce heat, and simmer until meatballs are cooked through and broccoli is tender, 5–8 minutes. Serve sprinkled with more scallions.

Have a great day

  1. That recipe sounds really good. I read that the reason they send out emails with so many recipes is that they are hoping you will click on the ads. Right, lol. Sounds like you have ghosts in your camera.

  2. I'm glad you're feeling a bit better. The bowling will pick up, I'n sure. That's creepy about the camera. I'd probably lock it in a closet on a Bible overnight, just to be safe. LOL

That does sound delicious. I love meat balls. Never had them made of chicken...unless you count spinach balls. Those are delicious.

    1. Would probably have had panels today but it's been hissing down with rain all day. Grrr.

It is odd Alex, you think it has a ghost in it too?

  4. I hope you will feel better and you will do better at bowling. I would take a piece of paper and cover the camera. My hubby does that and I had heard that sometimes people can get on your computer somehow and take pictures. I am sure all is ok but I would cover the lens

    1. Thanks Birgit. I did bowl better today, although Matt beat me twice. The camera wasn't connected to anything it was just standing there, all on it's own facing a box of kleenex.

    1. Thanks Ivy. Each day is better than the one before so one of these days I should be back to normal (if I am ever normal).

No work on railings today, it was raining all day.

  6. Weird about the camera. Did you ever see the Twilight Zone episode - if I remember where I saw it correctly - where all our electrical devices became sentient and proceeded to take over the world and make humanity their slaves? Very creepy.
It's good news about the balcony railings. It must be so frustrating not to be able to go outside at least occasionally - and, of course, if you're like me, as soon as you can't do something that's when you suddenly want to.

    1. No I didn't see that Helen and by the sound of it, glad I didn't. The camera wasn't connected to anything, just sitting on my desk.

Unfortunately it rained today so no workmen on our railings. You are right, I have been busting to go out on the balcony ever since they locked our door.
