No asparagus recipe today. However, Alex J. Cavenaugh sent me a link to Katherine's Corner where she has posted quite a number of asparagus recipes.
Double the flavor, halve the work—simply by using the same tangy combination of coconut milk, lime juice and brown sugar for both poaching the chicken and dressing the salad. Crisp romaine lettuce, cabbage and snow peas add freshness and an irresistible crunch.
Have a great day
Coconut-Lime Chicken and Snow Peas
Ingredients
- 1 cup “lite” coconut milk, (see Tips for Two)
- 1/4 cup lime juice
- 2 tablespoons brown sugar
- 1/2 teaspoon salt
- 8 ounces chicken tenders
- 4 cups shredded romaine lettuce
- 1 cup shredded red cabbage
- 1 cup sliced snow peas
- 3 tablespoons minced fresh cilantro
- 2 tablespoons minced red onion
Instructions
- Step 1
- Preheat oven to 400°F.
- Step 2
- Whisk coconut milk, lime juice, sugar and salt in an 8-by-8-inch glass baking dish. Transfer 1/4 cup of the dressing to a large bowl; set aside. Place chicken in the baking dish; bake until cooked through, about 20 minutes.
- Step 3
- Meanwhile, add lettuce, cabbage, snow peas, cilantro and onion to the large bowl with the dressing; toss to coat. Divide between 2 plates.
- Step 4
- Transfer the chicken to a cutting board and thinly slice. Arrange the chicken slices on top of the salads. Drizzle 1 tablespoon of the coconut cooking liquid over each of the salads.
Coconut milk makes anything taste great. Also coconut oil (which really a solid) is super.
ReplyDeleteYes it does Susan although I admit I don't use it very much.
DeleteI love anything coconutty and use it a lot. I cook a lot of Thai, so that always calls for coconut milk.
ReplyDeleteRead your previous post. I was pretty gobsmacked that the Leave vote won. There doesn't seem to be an 'exit' strategy planned. The UK may have just shot themselves in the foot, as we say. :-)
I wish I did Denise, I should try more Thai recipes I guess.
DeleteI was gobsmacked too. Horrified as well. I think you are right they have just shot themselves in the foot. Not done the rest much good either, the pound has fallen so our pensions will fall too.
Looks good, Jo.
ReplyDeleteThanks Ivy.
DeleteI adore anything with coconut in it. Great recipe Jo.
ReplyDeleteIt's funny Pinky, there seem to be people who adore coconut and people who hate it. Not come across anyone in the middle. I certainly love coconut.
DeleteThis sounds yummy
