Friday Dinner, Saturday Recipe

First I wanted to tell you I had tried a recipe I posted the other day Chicken.Cashews and Red Pepper Stir Fry and it was pretty good. I thought it might need more Tabasco, but there was enough, with the ginger, to give it a little spiciness.

Once in a while I  have a muffin at Tim Hortons (bit like Dunkin Donuts but better IMHOP) and really enjoy it. I have never tried making them myself as I would probably eat way too many which is not good for my sylph like figure, I wish.

Chocolate Chip and Banana Muffins

  • Servings: Makes 24 muffins

Like banana bread, these especially moist chocolate chip muffins are a great way to use up overripe bananas.  Muffins are an easy baking project because there's very little prep; this batter comes together in just 15 minutes. To add extra protein and delicious crunch, chopped toasted pecans would be delicious in them, too.

Ingredients

  • 1 1/2 cups sugar
  • 1 1/2 sticks unsalted butter, melted
  • 2 cups mashed overripe bananas (about 6)
  • 3 large eggs
  • 2 3/4 cups all-purpose flour
  • 2 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup mini chocolate chips (6 ounces)
How to make this recipe
  1. Preheat the oven to 350° and line two 12-cup muffin tins with paper or foil liners. In a large bowl, combine the sugar, melted butter, bananas and eggs; mix thoroughly. In a medium bowl, whisk the flour with the baking soda and salt. Add the dry ingredients to the wet ingredients and whisk until the batter is evenly moistened. Stir in the chocolate chips.
  2. Spoon the batter into the prepared muffin cups. Bake for about 28 minutes, until a toothpick inserted in the center of the muffins comes out with a few moist crumbs attached. Let the muffins cool for 10 minutes before turning them out onto a rack to cool completely.

Make Ahead

The banana muffins can be wrapped in plastic and frozen for up to 1 month. Let thaw and toast in a 350° oven.

Notes


To serve these muffins for dessert, warm them just until the chocolate starts to melt, split in half, and top with vanilla ice cream. Or real cream.

  1. I think I might have to try these muffins. My son brought over bananas for Charlie on Monday which Charlie decided he didn't want to eat. So now I have a whole bunch of bananas that are overripe and this looks like a recipe that just might work .

    2. I made these today. They were pretty good although I was a little short on bananas and made up the difference with sour cream. Also used bittersweet chips which I had open already. Next time I might add some vanilla extract. They were still good. I ate three, lol.

    Oh yes, that's my kind of recipe. And Tim Hortons, one of the first places I go to once I get through Customs as Vancouver airport.

    1. No drum roll?? We don't got to Timmies very often, but I love their muffins and donuts Gary. Good coffee too. They recently had a Roll up the Rim promotion and at least I got a free donut.

  5. I guess maybe the mini chips is the secret here. I tried to put choc chips in banana muffins and they all sank to the bottom. There wasn't a single chip in the top part at all, and just a pile of them stuck to the tin liner paper.

  6. I never thought to add chocolate to the banana. I've added them to zucchini bread and that's delicious.
