Canada Day, Fireworks,


I wish all my Canadian friends a Happy Canada Day. Luckily our bowling alley is open and the majority vote of the league was to bowl today. Of course the holiday means we will get fireworks outside our windows for at least 3 days and probably more as they will run into the weekend. Actually on Monday afternoon there was a noise which sounded like a gunshot right outside our windows. (We are on the 5th floor) I am guessing it was actually a firework. As usual fireworks have been on sale for a couple of days or more.

Well, I guess we qualify for a pair of dummies. Matt always goes shopping on Wednesday mornings around 7 a.m. It wasn't til late on Tuesday afternoon that I remembered the store would be closed. We will have to wait til Thursday as Matt refuses to shop in the afternoon. As it is, we were a tad short of bread and he popped down there to get some and said the store was like a zoo. Luckily, apart from the bread, we have plenty of everything else in the house. I can't believe neither of us thought of it before.

This recipe has been posted before, but as I have just made it for Matt and I it occurred to me that you might like to see it again. It is really delicious and quinoa is reputedly very good for you. I've just noticed the author notes call this a winter salad. I assure you it's fine at this time of year too.

Cold Quinoa Salad with Chicken and Feta

2 cups cooked quinoa, chilled (I cook 1/2 cup quinoa in 1 cup water)
1 small head radicchio, chopped
1 cup cooked chicken, cut in bite-sized pieces
1/2 cup cubed feta cheese
1 small red onion, chopped fine
2 Tbs pine nuts
1/4 cup chopped fresh parsley
Olive oil and vinegar dressing, to serve (I make a full French dressing)

1. Toss cooked quinoa, chopped radicchio, cooked chicken, cubed feta cheese, chopped red onion, pine nuts and parsley together until all ingredients are well distributed.

2. Dress the salad with olive oil and red wine vinegar

Servings: 4

  1. That salad looks good; going to try it soon. Happy Canada Day! The few days of fireworks would have done our dog in, didn't like the noise, we got to staying home on July 4th instead of seeing fireworks to help him feel safe and of course though we lived where fireworks were illegal other than public displays put on by cities, etc., people still managed the illegal ones and you never knew when those were going to go off.

    1. I hope you will enjoy it as we do Betty. Most dogs don't like noise although I had one who didn't mind gunshots but cowered during storms. I just learned that fireworks are illegal in Australia. Pity they aren't here.

  2. I used to love fireworks till I got dogs. Now I spend all summer trying to calm them down. Add the summer thunderstorms to the mix and it's horrible. But I'm with Matt....I don't shop in the afternoon either. About the latest I'll go is 10 or 11.

    1. I know what you mean JoJo. I also worry about the wild animals, they haven't even got someone to try and reassure them. As I say, Matt goes at 7 a.m.

  3. Mmm, that salad sounds good. We can hear fireworks from our house but we don't drive the mile or two needed to actually see them for the 4th. Happy Canada Day to you.

    1. It is good Susan. For some reason this time it worked out to 3 servings so having something else tonight and then finishing the salad tomorrow. We can see a lot of fireworks from our balcony but don't go anywhere to see them.

      And you don't even like the stuff. My instructor says to take each day as it comes - she knows I can handle the withdrawal and she has faith in me LOL.

    2. Most all of our stores are open too. Some close early but stores like Dollar General do big business on these days, the local manager told me.

      I was wondering where the asparagus were too?

  6. Watch out for those sparkies. Its always fun celebrating with folks and family from around town. I always enjoy great eats like these especially when Star Trek is on.

  8. Fireworks are illegal over here unless you have a permit. They weren't when I was a kid though and I loved Guy Fawkes night when Dad would set them all off. Every time there's a celebration including fireworks the dogs go crazy and run away. Happy Canada Day :) It's very close to Independence Day in the U.S.

    1. Interesting, I hadn't heard that before Pinky. I wish they would do the same here. Guy Fawkes used to be a favourite of mine. Animals hate them.
