Becel is an excellent margarine which does not seem to be available in the States. Of course butter could always be used for this recipe. I remember writing the other day that I didn’t use substitute products the other day, well Becel is an exception because it is excellent and, of course, spreads straight from the fridge.
Shaved Beef on Horseradish Herb Crostini
Ingredients
1½ tbsp (22 mL) Becel® Light margarine
1 tbsp (15 mL) horseradish
2 tsp (10 mL) Dijon mustard, preferably grainy
1 bunch of chives
24 thin slices whole-wheat baguette, about ⅓ of a baguette
4 oz (125 g) shaved good-quality lean rare roast beef
freshly ground black pepper
Preparation
Step 1
In a small bowl, stir Becel® Light margarine with horseradish, Dijon and 2 tbsp. (30 mL) thinly snipped chives until blended. Thinly slice baguette. Spread about ½ tsp. (2 mL) Becel® mixture over each slice of baguette.
Step 2 Cut roast beef slices slightly larger than baguette slices. Ruffle to fit on baguette. Cut some of the remaining chives into 2-inch (5-cm) lengths. For a garnish, place on roast beef in an X pattern, then grind pepper over top.
Tip Becel® Light margarine mixture can be made several days in advance, but stir in chives just before spreading on bread.

Oh damn, I didn't know that. I think it sounds a good recipe, horses or not. Yes I realise other margarines are available, but Becel just happens to be the best I have ever come across.

As a pollo-pescetarian I couldn't eat it but there are plenty of others around this house who would Jo!
