Electronics, Red Lobster, Snow and more Snow,

My electronics have got it in for me. First there was  the floating cursor. Then there was my desktop crash caused by plugging my older tablet into the USB port. Then I couldn't send emails with either tablet. However, I finally found a way to deal with the floating cursor. You do a system restore. Cheers, I now have a cursor which goes where I want it to. Then for the desktop I kept trying to reboot it, I wasn't convinced, and lo and behold it decided to reboot after a long time. Now all I have to do is sort out the tablets. I am pretty sure my old tablet is a goner. It doesn't want to hold a charge at all.

Saturday night we had a fair amount of snow dumped on us.- talking of typos Ijust wrote dumpled, I rather like that word -  Sunday it was kind of snowing all day so worrying about going to the Red Lobster for dinner. Think it will be OK. Local roads not great but I think the main roads will be clear. I discovered it is Lobster Fest and they are doing a dish of Lobster, truffle, mac and cheese. I had to let Bryan of A Beer for the Shower know as we had a Mac and Cheese recipe 'thing' going a while back. Doubt I will actually try it. Although it does look pretty good in the picture. however, they have lots of other specials which appeal to me more.

Damn, my cursor is floating again.

Admiral's Feast
Ultimate Feast
Now it is late Sunday night and we have feasted at the Red Lobster, I had the Ultimate Feast and Matt the Admiral's Feast. Then we both followed that with the Chocolate Wave Cake. I brought some of my cake home. They put a candle in the ice cream with the Wave Cake for Matt and sang Happy Birthday to him.

Obviously we didn't go for the mac and cheese. Both our friends had blackened Tilapia which looked pretty good as well.
One of our friends has been promising me a plate warmer forever as she doesn't use it any more. Never seen one before. It is electrical so you just plug it in I gather. Not read the instructions fully yet. She also brought us some Carrot Cake (leftover from one she made) to put in the freezer and half a box of chocolates as she couldn't eat them all!! I could. Matt had calls from both his daughters too so that made him a very happy camper. The only problem was the snow. It wasn't too bad going out, but when we returned it was very cold and the car was fairly well covered. We were both shivering. Matt more so because he will NOT wear hat or gloves. The roads were not good although luckily the plough was working round our way - thank goodness for being on a bus route - but nobody had done much for our front lot and I wasn't sure I could cross the garage threshold, however I did so easily. That's winter for you.

I guess I should have posted a seafood recipe! Ah well.

Pasta Stew with Rosemary Pork

8 oz Ditalini, Orzo or Alphabets, uncooked
1 tsp vegetable oil
1 lb lean, boneless pork loin, cut into 3/4-inch cubes
1/8 tsp ground red pepper
1/8 tsp black pepper
1 cup chopped onion
1/2 cup chopped celery
3 13 1/4-oz. cans fat-free, low-sodium beef broth
1 1/2 Tbs minced fresh rosemary or 1 1/2 tsp. dried rosemary
1/2 tsp salt
2 medium sweet potatoes, peeled and cut into 1-inch cubes (about 3 cups)
2 cups chopped fresh spinach
2 Tbs lime juice

1. Heat oil in a large Dutch oven or pot until hot. Add pork; cook until no longer pink, about 4 to 5 minutes. Drain well. Toss pork with red and black pepper in a bowl; set aside.

2. Add 1/4 cup beef broth to pot; add onion and celery, and cook until tender. Add pork, remaining beef broth, rosemary and salt. Bring to a boil. Add pasta and sweet potatoes and boil, stirring occasionally, for 10 to 15 minutes or until pasta is done. Stir in spinach and lime juice. (Stew will continue to absorb liquid.) Serve immediately.

Servings: 6

  1. Glad Matt enjoyed his birthday dinner out. I was looking for a scarf a few weeks ago and couldn't find it. When my son was home from Texas last week, turns out he had it with him. I forgot that I had given him my scarf and hat when he came up here once and the weather turned bad. Not the sort of thing you need in the south. He is on his way to London next week and will likely take it with him again. Our weather here is snowy and bitterly cold.

    3. What does he do? Friend's sinlaw does the same. He is in computers - an environmental programme he and a colleague started.

  3. I hate leaving the house in the snow. I'm not good at driving in it and I'm clumsy walking in it. Sorry to hear about all your computer troubles. I got the year of help from Geek Squad through Best Buy. For a year, I could take any electronic in for them to fix up. They were able to patch up several of our items, some were beyond hope. And one crashed completely, but they were able to get most of my data off the hard drive and put onto a new one.

    1. Never heard of that Liz. We used to be able to get tech help on line from our ISP but apparently too few people used it so they stopped. Pity, it was great.

  4. We actually started out with rain-sloppy as heck. It changed to snow and, last night, it was snowing and blowing. Thankfully it is nice where I am as we get our car after 4 and then we drive the rental back

    1. Lucky you Birgit, last night was miserable. Today it is cold, somewhat windy, but not snowing and the roads are fine. What happened to your car?

    2. The day before my mom’s funeral I was in a car accident. Jan 6th, pipes burst in the bathroom and it is now gutted, the 15th, my mom died and the 26th I had the car accident. I am ok, just my neck and shoulders were sore but our car was totaled and, yes, it was my fault. I ran right into someone...he got a slight dent in his truck. I had a perfect record until then and I think I should not have been driving. The following day was my mom’s celebration of life which turned out quite nice and people commented on how well it was done and how well I spoke and my brother too. I finally had an entire week without anything bad happening and am glad of it.

    3. I am so sorry to hear all those dreadful events piled up on you Birgit. It may have been your fault but I can see why you would have been upset and distracted. Glad you are OK. Glad your mom's celebration of life went well.

  5. I hate travelling in the snow. Glad you were able to make it out, and that Matt had a good birthday dinner. Your entrees look awesome. I think I would have picked either of those over the mac and cheese, too. Besides, the real dish never looks like the picture, does it?

    1. They were awesome Bryan. Wish I could eat like that more often. Didn't see the mac and cheese on anyone's table. Actually the dishes in the pictures above looked just like that.

  6. I don't like driving in snow either. Russell doesn't mind...he's used to it. I'm a chicken. lol I'm hoping we can get through Feb. with smaller snow events instead of a blizzard.

    1. I don't think anyone really likes it JoJo but if you have to do it, then you have to. I don't mind but would prefer not to. Especially if I have to clean the car off, I am spoilt these days.

  7. It sounds like you had a nice dinner. I haven't been to a Red Lobster in awhile. I don't think I've ever had a bad meal there.

  8. I feel your pain as regards the electronics. I finally gave in and bought a new laptop around Christmas because it was getting too hard to do anything and none of the fixes worked.
