Saturday Recipe

Well this is more, what I did for supper last night which worked: It was pretty tasty, but I forgot to take pictures. Typical me. This was so easy it will become a steady in our home.

Baked Salmon in Foil - a la Jo


Half an English cucumber cut into spears
1/4 red bell pepper thinly sliced
1/4 onion thinly sliced
1 clove garlic finely chopped
1 Tbs olive oil
Salt and pepper
2 skinless salmon fillets
Thyme
about 1/4 cup of white wine

I made two foil sheets large enough to enfold the salmon. I then place the cucumber, peppers and onions in a pile. I mixed the chopped garlic with the olive oil and sprinkled some of that on the vegetables.Then took the salmon and seasoned the fillets on both sides. Placed them over the veg and sprinkled with more seasoning and some dried thyme. Add the wine and fold up the parcels and place on an oven safe dish.

Cook in a 400°F for 25 minutes. I served these with peas.

  2. Sounds good. In the summer I use the outdoor grill and this probably would work well.

    1. Yes, it would be good on the grill Denise. We don't have one, too dangerous in an apartment building.

  3. That's how hubby makes salmon with the foil but he usually just puts spices on it, doesn't add the veggies within the foil.

    Sounded like a delicious dinner.

    1. I cook chicken in foil to Baili. Saves a lot of mess. Less to wash up.

    2. I don't feel bad because look at all that I can eat. I'd take whole foods over animals, if given the choice.

    4. If someone said, you can only eat chicken or only eat asparagus forever, but not both. Which would you pick?

    5. Well I don't eat much chicken anyway Ivy and I do love asparagus, but as it is only local for a few weeks a year, if I wanted to live I would have to choose chicken.
