Weather, Sausages.

The weather outside isn’t frightfulsunshine

In fact Matt and I have been enjoying a few rays over the last few days. We do it very carefully to make sure we don’t fry. I have to admit I get annoyed with people who go outside in the sun, spend several hours, get badly burned and then say they don’t tan. Of course not. Matt and I spend 10 minutes the first day, 20 minutes the second, 30 minutes and so on. In this day and age, one is supposed to be super careful because of skin cancer too. Luckily I wear Avon creams most of which contain an SPF component which assists with protection.

Unable to think of something for supper on Thursday, I grabbed a sausage peppers onionscouple of pork sausages out of the freezer. When we came home from bowling I decided I wasn’t terribly interested in them and anyway couldn’t think what to eat with them. I did a bit of Googling and came up with a recipe from Giada di Laurentis, one of my favourite TV Cooks, it is Sausages with Peppers and Onions.  I am not posting the recipe because I want to share another asparagus recipe with you. It shows the recipe served in a bun, but we had ours in soup bowls with a dinner roll on the side. It was pretty good. I may do the risotto I posted tomorrow, more time.

This is one of my favourite recipes for asparagus. It is delicious, crunchy and so easy to do. You can make a sauce (such as bechamel) to serve with these or just eat them as they are. I just eat them on their own.

Crispy Baked Asparagus Fries

1 lb asparagus, trimmed (if you have to)crispy baked asparagus fries
1/2 cup flour
2 eggs, lightly beaten
3/4 cup panko breadcrumbs
1/4 cup parmigiano reggiano (parmesan), grated
salt and pepper to taste  
Alternatively used chopped almonds instead of parmesan

1. Dredge the asparagus in the flour, dip them in the egg and then into a mixture of the panko breadcrumbs, parmesan, salt and pepper.
2. Place the asparagus on a wire rack on a baking sheet and bake in a preheated 425°F oven until golden brown, about 7-13 minutes.

Servings: 2

  1. Love the poem. It is wonderful to enjoy some sunlight. The sandwiches and asparagus look good too. I enojy using panko crumbs.

  2. Giada's sausage and peppers is one of my favorites. It's quick and delicious. Going to be 85F here today. Too hot for me.

    1. Never tried it before Denise, it was very good. Didn't have Marsala but used red wine instead. Supposed to be pretty hot here today. Our exercise room doesn't have a/c there is one fan, going to take one of ours down.

    I use sunscreen because otherwise I fry to a crisp in the first ten minutes.

  4. Oh that recipe looks AMAZING!!!!! Definitely going to try that. I usually do them in the oven with olive oil, garlic and parm, but this looks fantastic and less oily. YUM! I sat outside for the first time this year, but not for too long. I'm one of those burn-peel-back to white people, despite my Portuguese/Italian heritage. I find that I will tan if I am walking on the Canal or on my day trips, but only the front of my legs get tan. lol I'm not one for 'laying out' but I will sit outside and read, which is why the front gets tan and the back doesn't.

    1. Tanning by water always seems to work JoJo. I am a bit like you, never get my back done any more, or the back of my legs. Haven't really anywhere to lie out anyway. But so long as you take it carefully, you should tan OK. Just don't rush it like so many try to do.

      They are delicious JoJo, as I said, one of my faves.

  5. Love the poem:) It is going to be a hot weekend. I can't believe that 2 weeks ago I saw some snow flakes. My 2 least favourite - Asapagus and the dreaded sausage. I would rather eat asparagus than even look at sausage-lol One day I shall share the story of my mother, me and sausage:)

    1. Gonna be hot here too this weekend Birgit. Sorry to hear you don't like asparagus or sausage. You will find there are lots of asparagus recipes coming up over the next few weeks. I am nutty about the stuff.

  6. We don't have to worry too much about getting sunburnt here in Britain. It's rainy today - but, on the plus side, everything is beautifully green! Your sausage dish looks ideal for a day like this.

    1. When we lived there PL, I used to start sunbathing very early, sometimes lying out covered by a blanket with just my face showing. By the time summer came and we went to visit parents in the Med, people used to ask me where I had been. Of course rain doesn't help at all does it?

  9. I wear sunscreen every single day here, close to the equator. I had a deep skin cancer lasered out of my cheek when I was in my late thirties. We have the highest melanoma rate in the world here. I get annoyed when I see my daughter sun bathing.

    1. Very sensible Pinky. I'm not quite sure where you live. Hadn't realised you were close to the equator. Scary to have the highest melanoma rate. Kids think they are invulnerable.

  11. I'm saving that recipe for asparagus season. It sound delicious. As far as sunburn is concerned it takes a lot of heat before I burn - I can only recall it happening four or five times in my life and my husband's the same - but we managed to produce a child who burns in no time flat. She's a throwback to my pink and white complexioned and red headed grandfather I guess.

    1. Yeah, I guess you have to wait a few months now Helen. You should still use sunscreen in these days of skin cancers. Funny your daughter has such sensitive skin compared to you.
