FlounderFlounder (also called fluke) is a mild-flavored, white-fleshed fish and is a terrific, low-calorie source of lean protein, making it a great food to enjoy for weight loss or if you are at risk of cardiovascular disease or type 2 diabetes. Protein found in flounder can also help moderate your mood by slowinFlounder2g the absorption of carbohydrates and keeping blood-sugar levels stable. To maintain the health benefits of flounder, bake, grill, or roast the fish rather than frying it. (Note: Pacific flounder is the most sustainable choice.). This is a fish Matt and I very much enjoy and is one of the first things we choose for lunch when we go down to the Carolina’s on vacation, it is so delicious and there, couldn’t  be fresher. I couldn’t resist adding the Flounder from the Disney Movie Little Mermaid. He’s so cute. I sure couldn’t eat him.

Here is a recipe from Cooking Light which doesn’t “kill” the delightful flavour of the fish.

Browned Butter Flounder with Lemon Snap Peas


For a quick and healthy weeknight dinner, serve Browned Butter Flounder with Lemon Snap Peas. Browning the butter for this sauce, a classic French preparation called meunière, adds a toasty nuttiness, balanced with bright lemon. Just a little goes a long way to coat the delicate flounder fillets.

4 (6-ounce) flounder fillets
1/2 teaspoon freshly ground black pepper
1/8 teaspoon kosher salt
3 tablespoons all-purpose flour
4 teaspoons canola oil, divided
2 tablespoons unsalted butter, diced
1 tablespoon chopped fresh flat-leaf parsley
5 teaspoons fresh lemon juice, divided
8 ounces sugar snap peas, trimmed
1 1/2 tablespoons chopped fresh mint
1 teaspoon grated lemon rind
 

Preparation

1. Sprinkle fish evenly with pepper and salt. Place flour in a shallow dish; dredge fish in flour. Heat a large nonstick skillet over medium-high heat. Add 1 tablespoon oil to pan; swirl to coat. Add fish to pan; cook 3 minutes on each side or until fish flakes easily with a fork. Remove fish from pan; keep warm.
2. Return pan to medium heat. Add butter; cook 45 seconds or until butter begins to brown. Remove pan from heat; stir in parsley and 1 tablespoon lemon juice. Place butter mixture in a small bowl.
3. Return pan to medium-high heat. Add remaining 1 teaspoon oil to pan; swirl to coat. Add snap peas; sauté 3 minutes or just until crisp-tender. Stir in remaining 2 teaspoons lemon juice, mint, and rind. Drizzle browned butter mixture evenly over fish. Serve with snap peas

  7. I'm on the hunt, Jo! Flounder is a wonderful fish, despite the fact that they used to terrorize my mom as a child ~ usually when she was in my great uncle Cuppy's fishing weir! As for Mini-Alex: He's doing that book launch party (I mentioned on the last site" in a Canadian bookstore near the children's section!

  8. I've been stuck on Salmon for months. Maybe it's time to give flounder a try.

    At first I thought mini-Alex was hanging out with Smokey the Bear, but now that I've got my nose to the screen, it looks more like a beaver, a Canadian beaver. Hmm. I'm stumped. Get it? Beaver? Stumped? I crack me up sometimes.

  20. After reading this, and, not for the first time, I wish I liked fish. Just not in my cards, evidently. Perhaps I was a fisherman in a past life and can't stand to eat them in this one. I do love to catch them though!

  21. Fish cooked with lemon and butter, yum. They use flounder a lot in the fish and chip shops here. They also use 'flake' which I think is shark. The snap peas are a perfect accompaniment to the fish. Much healthier than chips :)

  31. Well, at some point, Mini Alex was definitely in Canada or knows someone who was! The Beaver is actually the mascot of a town not far from where I was born. Dauphin, Manitoba, Canada is home to a giant beaver mascot! I can't imagine Mini Alex has been to Dauphin, but that would certainly be neat.
    I have never tried Flounder, but I do enjoy white fish so imagine I would find it scrumptious!

    Mini-Alex looks like he's on a desk or dresser near a printer, or something like that, in a computer room. The little Mountie is adorable.
