Taking a Break, This 'n That,

I'm going to be taking it easy for a day or two. So there may not be many posts from me for a bit.

One thing, I have broken down, I hate what I think of as coulottes and what are called Capri pants here, but I saw some in the Avon catalogue so thought I would order them. We shall see, I have them but haven't yet tried them on.!!

Today, Thursday, we are going on the Travel League bowling. That means lunch at the Red Lobster and bowling at the alley where we normally bowl - Matt and I have not been doing the travelling this year.

I thought this rice looked delicious.

Mexican Rice

A quick and easy Mexican style red rice that is the perfect side!

1 Tbs oil
1 onion, finely diced
1/2 jalapeno pepper, finely diced
1 clove garlic, chopped
1/4 tsp cumin, toasted and ground (optional)
1 cup long grained rice
1 1/2 cups chicken broth (or vegetable broth or water)
1 (14 ounce) can diced tomatoes (I like fire roasted)
salt and pepper to taste
1 Tbs cilantro, chopped (optional)
1 Tbs lime juice (optional)

1. Heat the oil in a medium saucepan over medium heat, add the onio and cook until tender, about 3-5 miutes before adding the jalpen, garlic, and cumin and cooking until fragrant, about a minute.

2. Add the rice, mix in the broth, tomatoes, salt and pepper, bring to a boil, reduce the heat to medium-low, and simmer, covered, until the liquid has been absorbed and the rice is tender, about 17-20 minutes.

3. Mix in the cilantro and lime juice and enjoy!

Servings: 4

Option: Replace the oil with bacon grease or lard.

Option: Omit the jalapeno pepper or replace it with, or add 1/2 teaspoon chili powder or cayenne to taste. (I like chipotle chili powder for the extra smokiness.)

Option: Replace the canned tomatoes with 1 cup diced fresh tomatoes!

Option: Add frozen peas, and/or diced carrots, corn, etc!

Have a great day

  1. You deserve to take a break and we will be here. I like Capri pants and have quite a few..I remember my mom hating these pants...oh well

    1. I tried these on and they were horrid Birgit, fit wise I mean, the waist wasn't bad, the hips and legs were made for an elephant LOL.

  2. I haven't worn short pants in years, despite my nickname being 'legs'. But, as I recall, culottes are made to flare out at the hip and capri pants are cropped mid-calf and are slim. Two different animals. We all need a break from blogging. I take one every week, lol.

    1. Didn't know that was your nickname Denise, LOL. I didn't realise there was a difference.

  3. I love capris, perhaps because they remind me of Audrey Hepburn who just always seemed so classy.

    Enjoy your break!

    1. Well I have tried them once or twice and cannot find any suitable for me Liz. Not only that, I see heaps of women wearing them who look G**awful. It's the legs with larger or older women.

  4. Hi Jo - sounds sensible ... we all need the space ... and sure hope those culottes work out for you ... I have to short shop, deck shoe shop, bag shop or similar ... as cheap and cheerful as pos!! Cheers Hilary

    1. Yes, I am pretty tired right now Hilary. They didn't work out for me, waist OK, hips and legs elephant size. I know what you mean.

  5. Hi, Jo,

You definitely deserve to take a break for a few days! Relax and enjoy yourself.

Capri pants sound nice... they are much more tailored than coulottes. You'll look great in them! And from what I understand they are very comfy. I wore a male version of them when modeling back in the late 80's. Great for the beach!

Hope you enjoyed the red lobster and bowling!

    1. Thanks Michael. I have never managed to find any Capri pants that look good on me I'm afraid.

I certainly enjoyed the Red Lobster and eventually the bowling. I finally beat my average.
