I am not much of a fan of watermelon primarily because of all the seeds although I know you can now buy seedless watermelon. However, this recipe appealed to me. I do like prosciutto with fruit.
Watermelon and Prosciutto With Mint And Toasted Almonds
Watermelon and prosciutto may seem like an unlikely pair, but the salty-sweet mix will make this
your new go-to fruit salad.
2 Tbs coarsely chopped almonds
½ cup coarsely chopped mint leaves
½ tsp finely grated orange zest
2 Tbs fresh orange juice
1 Tbs olive oil
Kosher salt
1 3-pound seedless watermelon, rind removed, cut into 1-inch pieces
2 Tbs white wine vinegar
2 oz thinly sliced prosciutto
1. Heat a small dry skillet and toast almonds, tossing often, until golden brown, about 5 minutes.
2. Mix almonds, mint, orange zest, orange juice, and oil in a small bowl; season with salt.
3. Toss watermelon with vinegar in a large bowl; season generously with salt. Transfer watermelon to a platter and drape prosciutto over top; spoon almond mixture over.
Servings: 4

Oh my gosh, not a watermelon fan? I love the stuff. Though this year near us, the watermelons have been crap.

DeleteI love watermelon - when it's been picked properly ripe which is not always the case. I have fond memories of, as a kid, sitting on the back lawn eating those my father used to grow. They were so sweet.

DeleteI do not like watermelon or prosciutto (too salty for me). I was very surprised to find out that Russians love watermelon. There was a huge display in GUM department store when we were there.

DeleteSeedless isn't technically without seeds...there are plenty of soft white ones. I love the stuff! My uncle used to sprinkle salt on his. Ick.
