Subway, Moncton Gunman. D Day.

Sub thai soupOnce in a blue moon we have a Subway sub for supper (or lunch when we are travelling) and Thursday there was a blue moon (what you didn’t see it?) so down we popped to get our subs. I noticed their ad for soups one of which was Thai coconut curry which sounded good so I decided to try it. Matt didn’t gSubet one. It was very good, not very spicy, but pretty tasty nevertheless and I enjoyed it. I enjoyed the sub too as it’s quite a while since we last had one. I left Matt to do the dishes LOL. It cost us about $8 and is well worth it I think. Mind you the soup was a tad higher in calories than I expected. Oops. We noticed they have cut down on paper napkins, they used to stuff a load of them into the bag.

Moncton GunmanWe have a gunman on the loose in Moncton, New Brunswick at the moment.  People are being told to stay inside and lock their doors. He has already killed three RCMP officers and wounded two. The suspect is a 24 yr. old Jason Bourque. People in Moncton are terrified. Some even got to watch some of the shootings outside their homes. According to friends and acquaintances, Bourque was anti police and somewhat anti authority of any kind. I do so hope they catch him soon.

Today is D Day or the day on which the allies invaded Europe in World War II. Often referred to as the Normandy Landings. Not something I remember anything about. It was basically the subject of the movie The Longest Day which  was an excellent movie.

Today is also go get some more asparagus day.

Asparagus and Cheese Omelette Wrap
Readers Digest

2 eggsasparagusomelettewrap
1 Tbs water
1 tsp chipotle purée (optional)
1/2 tsp salt
1 tsp extra virgin olive oil
2 Tbs chopped fresh chives or green onions
1/2 cup grated smoked cheddar or smoked mozzarella
3 spears asparagus, trimmed, cooked and diced
1 10 inch whole wheat flour tortilla

1. Beat eggs lightly with water, salt and chipotles.
2. Heat oil in a 10 inch nonstick skillet and add eggs. When eggs start to set, swish them around so that the unset top rotates to the bottom. Sprinkle with chives, cheese and asparagus. Cook a minute longer, just until cheese starts to melt.
3. Meanwhile, warm and soften tortilla in a skillet (about 1 minute) or microwave about 10 seconds, or wrap in foil and heat in a 300°F oven for 10 minutes. Slide the omelette onto the tortilla and roll up. Cut in half on the diagonal for a sandwich or in slices for appetizers.

Servings: 1

Author Notes
These are great for a breakfast or brunch sandwich. You can make them ahead and wrap in foil and reheat in the oven, or you can slice them for little appetizers and serve hot or cold.

Have a great day
Jo

    1. Yes he has been, not read the report but the headlines said he wasn't even armed when they arrested him.

    1. They caught this one, not read the report yet. I don't understand about the students at all.

Hope you have a nice weekend too.

    1. It must be a great relief for the neighbourhood. But isn't it odd he didn't have any weapons on him when caught?

  4. Hi Jo,

Managed to get here today. Hello. We have a Subway restaurant in our English town. It used to be the local job centre. Of course, double the price and you have the price it costs here.

That gunman story was headline news in Britain. A relief that he was caught quite quickly. Such an awful tragedy with the deaths of those three Mounties.

I would love an omelette like that.

Have a peaceful weekend, my good friend.

    1. Hi Gary, thanks for making it. I'm sure about the price, I'm assuming the same thing would cost you about eight quid.

And the two wounded as well.

      So make one.

      Great weekend to you Gary.

  5. Glad to here they caught him. Shouldn't be that easy for psychos to get access to guns really. Poor innocent victims.

    1. Normally in Canada it isn't that easy to get guns.

  6. Hi Jo - I'm glad they've caught the gunman .. there's too many of these things going on now - and so sad for the men and particularly for their families - I hope the two injured recover ...

The wrap could make a great party dish .. or starter slices ... and am glad you enjoyed the Subway lunch .. cheers Hilary

  7. I agree, great that they caught him. But very sad for the families. One wonders why he did it.

Very true it could. So many recipes, so little time LOL.

  8. It's a sad state of affairs watching the news these days. It's something I've done far less of the past year (for other reasons, of course) but I feel as though the willful ignorance has left me none the worse. Regarding the subs, I usually go turkey and provolone on Italian, minus chips and cookies. Some have a good steak & cheese, but the quality varies with each restaurant.

    1. I agree, missing the news just means you've missed more bad stuff than good. I enjoy subs now and again as I said, but one thing they have in the US that we don't is oil and vinegar dressing which is my favourite. Don't have the chips but sometimes weaken for a double chocolate chip cookie.
