Saturday Recipes

Saturdays do come by very quickly these days. This one is special because my old man is 82 today. As you know, we always have something a bit special on Saturdays and this time it's something tried and true. I am making a Portuguese Pork Casserole and accompanying it with Potato Purée made with Goat Cheese and Cream and the Stir Fried Bok Choy recipe I posted the other day. I am then following  with Chocolate Lava cakes and cream. This will be accompanied by a Portuguese wine we thought we would try. Hope we like it!!

This recipe is my adaptation of several.

Portuguese Pork Stew With Cumin (My version)

I also added carrots to cook with the rest and served with bow tie pasta.

2 lbs boneless pork (cubed )
2 tsp cumin
8 oz crimini mushrooms, sliced
3 garlic cloves (finely chopped )
rosemary (to taste)
1 bay leaf
salt and pepper (to taste )
1/3 cup dry white wine (or more if required)
4 tsp lemon juice
2 Tbs olive oil
1 large onion (finely chopped )
10 large pitted black olives
lemon wedge (for garnish)

1. Marinate pork in mixture of cumin, garlic, bayleaf, salt, pepper, wine and lemon juice and rosemary

2. Marinate for 6 hours.

3. Remove pork from marinade and reserve liquid.

4. Sauté onion and garlic in oil, add pork and sauté until browned. Add mushrooms.

5. Add marinade and bring to a simmer.

6. Simmer 30 minutes add wine, water or stock if necessary to keep it moist. Scatter with olives and serve with lemon wedges.

Servings: 4

And if you want it, here is the Potato Purée. I do not like mashed potato very much but I love this.

Goat Cheese Potato Purée


1 1/4 cup heavy cream
6 oz soft goat cheese
6 potatoes, cooked, peeled and diced
4 Tbs unsalted butter, softened
Salt and freshly ground pepper

1. Place goat cheese in a small food processor with 1/4 cup of the heavy cream and process until smooth. Mash potatoes in a large bowl. Mix in the butter and 1 cup of the heavy cream. Fold in the goat cheese mixture and season with salt and pepper to taste

Servings: 8 (maybe)

  7. That stew sounds and looks amazing. I'm going to try that one. At first I thought they were prunes, not olives. Prunes would probably work too, do you think? All very yummy. Thank you, Jo.

    1. Funny that Nicola, our guest thought they were dates. I'm not sure a sweet fruit would work but be interesting to try. I found this needed more liquid.
