We seem to be in for it lately, yesterday I wrote about my recliner breaking and today my toaster oven went kaput. I am assuming the third thing was the car problem we had earlier this year. I have now discovered my chair is actually a Lazyboy which means I may be able to get service from them. It's not under warranty or anything and I bought it second hand, but no wonder it is so very comfortable. As for the toaster oven, I found one on sale at our local Canadian Tire store. It is a Black and Decker which is the make I have always had for my toaster ovens only this one is also a convection oven. I wasn't too sure what that meant until I read the booklet. They describe it as a '6 slice', of what, mini bread? However, fine for what we want. There are a few improvements from our last one though, not least of which is a crumb tray. It was always a pain in the butt to clean the bottom inside.
Bowling was OK yesterday but the place was so very noisy. Packed too. The Tuesday League is a big one plus all 12 lanes were filled by someone. I don't know if they had anyone downstairs as well. I gather their family day was a pretty busy one, the senior owner joked about needing a Brinks truck to go to the bank. I offered to do the job, but he didn't take me up on it. Hopefully Thursday won't be so noisy.
I love oatmeal for breakfast and I would love to try this recipe but I know Matt wouldn't eat it and I can't see any way to cut it by half successfully unless the calories went sky high. However..... I will certainly have to think about it.
Grilled Avocado and Chili-Spiced Egg Overnight Oats
A grilled avocado elevates this flavorful overnight oats bowl with its charred flesh and cool, creamy interior. Crowned with a 6-minute egg and garnished with spicy chili flakes, this savory breakfast will
keep you satisfied 'til lunchtime.
Cooking spray
1/2 ripe avocado
Basic Overnight Oats
1 room temperature egg
1/8 tsp kosher salt
1/4 tsp crushed red pepper flakes (optional)
1/2 chili pepper, sliced thin
1/2 tsp sesame seeds (optional)
1 tsp extra-virgin olive oil
1. Heat a grill-pan over medium-high. Generously coat pan and avocado with cooking spray. Place avocado on grill pan, flesh-side down, and cook 4-5 minutes, rotating once halfway through, until deep char marks appear. Remove skin and slice in half, either crosswise or lengthwise. Place one half on top of each bowl of oats.
2. Bring 2 quarts water to a boil in a medium saucepan over medium-high. Gently place egg in water and cook 6 minutes. Remove with a slotted spoon and place in a bowl of cold water. Let stand 2 minutes. Remove shells gently and slice in half. Sprinkle evenly with salt and crushed red pepper flakes. Place one half inside or on top of each piece of grilled avocado.
3. Divide chili pepper slices and sesame seeds evenly among each bowl. Drizzle ½ teaspoon olive oil over each bowl of oats.
Servings: 2

Hi Jo - hope that's your run of challenges over .. and things can be fixed. The Ikea reference is fun ... I've never been a fan of hot avocado - don't know why ... I'll enjoy it fresh .. but this sounds an interesting recipe .. cheers Hilary

DeleteIt's strange how things break in bunches. In the last two months I've had to have three toilets repaired, a shower door adjusted, and a new mirrored closet door is on order after the mirror just fell off. Amazing that it did not break when it hit the ceramic floor.
ReplyDeleteBTW, from all the junk mail I get you would think all seniors are deaf - everyone wants to sell me a hearing aid. I'm guessing since you can hear the racket at the bowling alley, you do not have a problem either.
Three toilets? Big house. It is incredible the mirror didn't break.

A toaster oven without a crumb tray? Barbaric. Although we had one and finally chucked it since we never used it.

I used my toaster oven a lot Alex. It is particularly good for baked potatoes. I like a crunchy skin on mine.

That video is so funny:) yes, the IKEA reference was funny and I like the Golem image...hahahaaa. Hopefully your next bowling jaunt won't be so busy but I know you still enjoy it no matter what. I don't own a toaster oven and never really understood why to have one but we do have a toaster:)

DeleteI haven't had a toaster oven in years. Actually....I'd gotten one and decided to try and melt beads in it instead of in the oven. I did it outside on the deck. One of my friends on FB made a crack about not wanting to read about a raging house fire in Bourne b/c the woman was melting beads. I chuckled...then decided to check the thing. Sure enough, flames were shooting out of it! hahaha I got it unplugged and turned the garden hose on it. Apparently the beads I was trying to melt were very low quality from China made with a ton of petroleum products. They ignited.

DeleteI saw a project on pinterest to melt them inside of cookie cutters to make shapes like hearts and so forth. There are plastic beads that you can melt safely, like those in the Makit Bakit suncatcher kits. But I'd just grabbed a cheap bag of multicoloured faceted plastic round beads. From now on I stick to Makit Bakit, or Shrinky Dinks!

ReplyDeleteI think Lazy Boy might cover it. My mother had hers fixed after having it for years. I had one break and they didn't cover it, but my kids had broken the frame and Lazy Boy only covered the mechanisms. Or something like that.
I'm with Matt. I would eat that either. Give me sugar and butter in my oats, maybe some apples.
I think they are Liz. Just waiting for an appointment now. Costing $60 for the visit, but that is adjusted against the labour cost for the repair. Parts are free.

ReplyDeleteWhen it comes to oatmeal, I like raisins, cinnamon, and sometimes, some chopped apples an walnuts, too. I know. Boring, but that's the way I've always eaten it, except for one stretch of time as a kid when I ate it with maple syrup every day. Didn't take me long to get sick of it and go back to my raisins, though.
Your recipe would work fine if you don't mind eating the same thing two mornings in a row. It's be easier to prepare the second day, too.
I have never tried it with fruit Susan, my father always added salt said it was how the Scots ate it, dunno if that's true.

Hmmm, my grandparents... and my father... were born in Scotland, but I don't remember them eating salt on oatmeal. But (shhhh) my grandmother wasn't a very good cook. She ADDED salt to creamed chipped beef!

Well your grandmother had probably never heard of creamed chipped beef before she came over the pond Susan. I had to look up the recipe to see what it was. I have heard of it but never made it or eaten it.

I use the term fan oven (aka convection oven), and it's wonderful for circulating air about for bakes and other things. Love it.

Avocados!!! Yum.
So far I am enjoying my toaster oven Ivy. The convection seems to help it cook better.
