Lights, Bowling, Mushrooms, Skin Cancer,

We had a problem with our hall lights, we have a longish hall in our apartment. Called the Super, he couldn't fix it, he sent for the electricians. One of them arrived at 8:45 a.m. (embarrassing, still in my nightdress - you'd think they would have been courteous enough to let us know) and removed both lights and installed LEDs. Boy are they ever bright. Almost like daylight. Not sure I actually like it but I guess we will get used to it. I think our new lights may be even flatter than this one.

Monday bowling, the last one that counted, was terrible. Two of our team bowled ahead so it was just Matt and I. He bowled better than I did.

I washed some mushrooms one morning and then had noodles for lunch - I had intended spaghetti with mushrooms for supper but figured I shouldn't have 2 lots of pasta. I then Googled for how to
store washed mushrooms. Everything said don't wash them til you want to use them, yes, I know that, but what if you do what I did? No help at all. Next day: I put the washed mushrooms into a plastic bowl with a piece of paper towel pushed down onto them and then put them in the fridge. I am now in a position to tell you that they survived in perfect condition and were very tasty when used. Which now makes me wonder, why do they always say you mustn't wash mushrooms until you are ready to use them. Maybe one day I will wash some more and see just how long they keep in usable condition.

This morning, Thursday, Matt is having his skin cancer attended to. Keep your fingers crossed please.

I decided to make some coleslaw the other day, haven't done so in a while. I like my coleslaw very crispy, crunchy. I have had coleslaws that are really soft and to me not a bit enjoyable. This recipe is one I got from a friend in the US many years ago. It's a very simple recipe but one we both enjoy. I used red pepper as I didn't have green.

Selma's Coleslaw

1 head cabbage, hand shredded
2 sticks celery, shredded
1 cucumber, chopped
1 green pepper, seeded, chopped
1 med carrot, grated
1 large onion, or more, chopped
2 Tbs Mayonnaise (I use Hellman's)
1 Tbs Vinegar
salt and pepper

1. Prepare vegetables in a large bowl. Mix mayonnaise, vinegar and seasonings. Toss vegetables in dressing. Taste and adjust seasoning to preference.

  2. I have a friend who is always dealing with skin cancer issues. She actually has had her nose rebuilt. Glad I never was a sun worshipper.
    Blue Apron did a coleslaw with sweet chili paste. That was really good. I don't think I've ever had mushy coleslaw, but I usually make my own too if I have the time.
    BTW, I am no fan of any of that new lighting. With light sensitive migraines, some are not pleasant to be around.

    1. Matt too has been dealing with them for a long time. First time was in NC and that was more than 20 years ago. I have a recipe for a hot and spicy coleslaw which I like. Think I have posted it before Denise.

      I never thought of migraines and the lights, but I can see that they would cause a problem. Luckily I don't go near these very often, just passing through mostly.

  3. Chad switched all of our light to LEDs. I'm used to the unflattering lights now, but it was odd at first. You can get different kinds of LED light. I bought one bulb that's supposed to be a softer light. It's pretty much just yellow tinted.

    I love coleslaw. I like it crisp too with a good bit of tartiness.

    1. Luckily these being in the hallway it doesn't really affect us too much Liz. Not sure I would want one in the living area though, unless it was the softer lights.

      Matt has survived the op. bit of bleeding trouble but seem so have stopped now.

      Sometime like it spicy others not so much.

    Anytime I've washed mushrooms, they were indeed mushy the next day.

  7. I hope Matt is doing ok and the procedure went well. I assume you aren't supposed to wash mushrooms till you're ready to use them is that they'd be all wet and slimy the next day.

  9. SOOO sorry to hear about Matt's skin cancer.... Hopefully all will go well and he'll be fine... Sending super positive vibes his way!

    I LOVE mushrooms, too. Yum. I put them in rice, salads, pasta, meatloafs. Saute them with chicken, chop meat, and turkey meat. They add sooo much flavor to everything!

  10. I've heard LED lights dim over time, so just when you think you're used to the bright lights, they might actually be a softer light. One thing about LED lights, though, is they aren't as warm as incandescent - I'm kind of partial to the warmer feel of those old bulbs, but can't argue with the energy savings!

    Fingers definitely crossed for Matt to have a speedy recovery.

  11. I hope all went well with Matt. I’ve had to have a couple of skin cancers removed - nothing major fortunately. Seems unfair given my family was relatively sun conscious for the time - no spending hours baking in the sun covered in sun tan oil for me. But it’s Australia - some sun damage was inevitable I suspect in the days before sunscreen was available.

    1. This was his fourth skin cancer op Helen. He is doing OK although it all bled quite a bit on the day. He has never used sunscreen but then as kids we had no idea how dangerous it all was.
