I've done something similar but not with collards. Sounds yummy.<br /><br />Btw, I was reading another one of your articles here--always something interesting--I do omelettes for dinner a couple of times a month. Mine come out moist and good but then I don't use milk. I learned from chef, oh years ago, not to salt or pepper the eggs until you serve it and not to use milk. But I do love stuffing them with grated cheese and bits whatever takes my fancy. Usually, for me anyway, it's mild cheddar, peppers, mushrooms, sometimes bits of bacon, sausage or ham. <br /><br />I've done a yummy one with chicken, sauteed spinach, mushrooms, a bit of onion,garlic and asiago cheese.<br /><br />Yah, it's dinner time.
