Decorations, Weather, Health Care,

Well, the decorations have now been put away. My friend with her cart helped me and it just took us a few minutes. I checked with her about tipping the super, she says she does so if he does something special for her. I have lived here for 17 years and I have never heard about annual tipping before. And, as my friend pointed out, this super hasn't been here very long anyway. I will make some more enquiries about what most people do. It's amazing that our Christmas Tree is still usable, it sheds profusely every year but it still looks fine. Mind you, it causes a stack of vacuuming which I find extremely difficult, my legs can't stand it more than my back, and my back doesn't like it either LOL. I noticed the price on it's box, $49.95. Not sure how long we have had it, years and years, and it is still going strong. I seriously thought about throwing everything away but decided I would really regret it next year.

I am delighted to say the temperature has improved slightly round here. We never got the storm here
which socked in most of the East Coast. I wonder what the Canadian Snowbirds thought about getting snow in Florida this year. The south generally tends to seize up because they are so unused to such weather. I remember one winter in NC we got 18 inches at Christmas time and didn't get mail for a week. The mail lady would NOT drive into our area. Mind you some neighbours had swapped their home for Christmas with relatives from New Hampshire and they didn't know how to drive in the snow either. This is my favourite winter picture.

Today, being Monday, I am going bowling. This morning we have the Care Co-Ordinator calling to see us. I think she is the Physiotherapist's boss. Not sure. The Physiotherapist comes tomorrow, Tuesday.  I have a lunch date with a friend too. She heads off to Florida at the weekend. Lucky her.

Just in passing, I have now written over 3,000 blogs. I am not sure quite how many because I had to delete one or two because of the pictures I had "borrowed".

I am copying a recipe I posted in 2011 which I have never tried and really should do so. It calls itself a summer dish but I think it would be just as good at any time of year. I notice the picture shows the fish sitting on a bed of asparagus. I couldn't copy that part until the spring. I will not buy store asparagus.

Cold Poached Salmon with Ginger Mayonnaise

Cold poached fish, especially salmon, is a classic summer dish. For a salmon on mayonnaiserefreshing light meal, serve with cucumber salad or cooled, blanched summer vegetables and a fresh baguette from the bakery.
Ingredients
1 piece (2 inches/5 cm) gingerroot
4 green onions
2 tbsp (30 mL) rice vinegar
4 salmon fillets (each 4 to 5 oz/125 to 150 g)
1/3 cup (75 mL) mayonnaise, light or regular
2 tsp (10 mL) sesame oil
Salt and white pepper or pepper
Preparation
Thinly slice half of the ginger; finely grate enough of the remaining ginger to make 2 tsp (10 mL). Cut white parts of onions into 1-inch (2.5 cm) lengths; finely slice green parts and place in small bowl of ice water. Set aside. 

In saucepan just large enough to hold salmon in one layer, pour in enough water to come 2 inches (5 cm) up side of pan; add sliced ginger, white parts of onions, 4 tsp (20 mL) of the vinegar and 1 tsp (5 mL) salt. Bring to boil; reduce heat and simmer for 5 minutes. Add salmon; cover and cook at bare simmer just until fish flakes easily when tested, 4 to 6 minutes. Remove fish with slotted spoon; let cool.

(Make-ahead: Cover and refrigerate for up to 1 day.)
Drain green parts of onions. Mix mayonnaise with grated ginger, onions, remaining vinegar, sesame oil and ¼ tsp (1 mL) pepper. Serve with salmon.

  2. I now have my third large artificial tree for the living room. I got tired of moving furniture so a few years ago I bought one of the narrow trees, pre-lighted. It is great. I've always had some type of smaller tree for the family room. Yeah, two trees.
    As for tipping, I only tip the newspaper man. I used to leave cookies for the mail lady, but never even got an acknowledgement, so I stopped.

    1. Well of course Denise, you have Charlie - the only Christmassy person is me. Matt couldn't care less. I guess technically I have two trees, one very small one on the TV stand.

      Don't have a paper and the mail man delivers to all of us, not just me. I have thought about tipping him, but we keep getting different mail people.

  3. We still have our very first tree and set it up in the front room every year. It looses needles, but it's still a good tree. We might get another fiber optic one next year like our main tree though.

  5. Cold. Poached. With mayo. I haven't tried salmon in any one of those ways. I'm going to have to give this a try... even if it's not summery in the slightest.

    Congrats on over 3,000 blog posts! That blows my mind. I'm still just trying to put together one. And excuse my absence around here, but the holidays have kept me swamped and offline. Plus, I'm working on my new project that I'm going to announce next week.

  6. Glad you managed the decorations. We're enjoying things being warmer too. Though it's not really warm. I've never lived in an apartment complex and wouldn't have known to tip the super. We do tip our newspaper delivery person.

    1. Not sure where you live Susan, but being warmer is only relative here. I am not sure if people do tip or not. Only checked with one person so far. Gotta do some research LOL

  7. I wonder why a non-shedding Xmas tree has not been invented yet. Maybe they have been. Ours is still up... shame on us.Glad to hear the weather has improved.

    1. Too late for me Pinky, I wouldn't go out and buy a new tree now even if it was guaranteed not to shed. Traditionally in the UK we used to take everything down on Twelfth Night (Jan 6). Mind you, we didn't decorate so early either. So get cracking and dismantle yours Pinky. You will be back at work soon and then what?

    1. I've said it before JoJo, I don't ever remember a real tree - I'm probably doing my mother an injustice. At this point in time I don't know. Living in an apartment building not allowed real trees anyway.

  10. The tree looks good so keep it and enjoy! Congrats on the number of posts you did. We have a warm spell but, Sunday night, our pipes burst in the bathroom. It is now gutted and we need to get things fixed. On a nicer note, I got my hubby the first season of Poldark. We love that show
