Breakfast

When I lived with my parents, we had different things for breakfast every day. Sometimes we had herrings dipped in oatmeal and fried, sometimes slices of salt pork, bacon and eggs, all kinds of different eggs, kippers, ham, porridge (oatmeal) and so on. I was complaining to my friend who came to dinner on Saturday, that Matt eats the same old cereal and orange juice every day. My friend told  me she had the same breakfast every day too. Sorry, but that's boring, boring, boring. I just came across an article talking about different breakfasts and I thought "aha I'm not the only one". I am going to try a few of their suggestions. I haven't a clue, yet, what the picture shows other than a breakfast dish. Will find out as I peruse the article more thoroughly. How many of you stick to the same ol' thing every morning. I hope you are not one of those who skips breakfast altogether. Not a good thing to do.

Somewhat distressed. Had to call the ambulance for Matt again. Snowing like a son of a gun out there too.

Traditionally Congee is made with rice I believe, but this is a recipe for Oatmeal Congee from the American Diabetes Association. I think the picture above could well be for congee.

Oatmeal Congee

This version of what is traditionally a high-carb porridge is easy to make whole grain and healthy.

1 cup old fashioned rolled oats
4 cups low-sodium vegetable broth
1 Tbs reduced-sodium soy sauce
1 cup sliced mushrooms
1 Tbs lime juice
cooking spray
4 eggs
2 scallions, sliced

1. Add the oats, broth, and soy sauce to a sauce pan over high heat. Bring to a boil, then reduce to a simmer until the oatmeal is tender, about 10 minutes.

2. Coat a small nonstick sauté pan with cooking spray. Add the mushrooms and sauté until tender and all liquid is evaporated, about 4 minutes. Add the lime juice and sauté until the liquid has evaporated. Stir the mushrooms into the oatmeal porridge.

3. Clean the sauté pan, then add cooking spray. Fry the eggs until the yolks are just set.

4. In a bowl, pour in 3/4 cup oatmeal porridge, top with a fried egg, and 1 1/2 tsp scallions and cilantro. Repeat for the remaining 3 bowls.

  1. Breakfast is my favorite. I do not eat cold cereal though. We have a wonderful restaurant here that started out as just breakfast and sandwich lunch. One of my favorites when I go out.

    Hope Matt is OK. My neighbor is struggling trying to take care of her husband at home.

    1. Not my favourite Denise, but I would love to have a local restaurant that specialised in breakfasts - oh I think we do, place called Cora's. Been there once or twice for lunch. They too only do breakfast and lunch.

      Struggling is definitely the word. He is home now again.

  2. I am boring, boring, boring because I love my toast and honey! If I don’t have it, I feel I just missed out on something special. I will skip the herrings in the morning though I love pickled herring in sour cream..yum. I hope Matt is ok and that you are ok because it takes a lot out of you.

    1. I meant the breakfast was boring, not the person eating it Birgit. Do you get fresh honey or just buy it from the store? Matt came home last night, by cab, as they told me not to drive the roads were so bad.

    2. we buy them at the store but we did get a few jars from the local bee keeper when we were in the Montreal area and it is so good.

    3. I get my honey at the asparagus farm. They even have their own hives now. It is so much better than the crap they sell in the stores. Must be somewhere in your area where you can buy the good stuff Birgit.

  3. Hi Jo - I'm just not a breakfast eater ... but breakfast dishes for brunch, or supper = fine! I hope Matt is ok and both your 'healths' can be easier for 2018 ... take care - that weather your way looks difficult to put it mildly ... all the best for 2018 - cheers Hilary

  4. I'm with you Jo - there has to be variety - we're lucky not to have to rush out of the house in the morning so breakfast is my least rushed meal of the day and I take my time - only thing I can't cope with is herrings.
    I hope Matt is ok and that you are taking care of yourself too. Fil

  5. Most days I eat the same thing for breakfast lunch and dinner! I ALWAYS eat a boiled egg (by itself) for breakfast and I eat Ryvitas/tuna/tomato for lunch (unless I go out when I always have a salad) and either cheese and crackers or soup for dinner. I eat fruit in between if I get hungry. Sometimes I think there;s something seriously wrong with me. My father does the same sort of thing and has all his life!

  6. Hi Jo,

    I'm another one who is not a big fan of breakfast. Unfortunately, these days, with my erratic and poor sleeping habits, breakfast time is about the time I go to bed. However, you did make me recall when I was very young and attempting to eat a kipper for breakfast. Yuck!

    I hope Matt is getting better and you don't have too much snow.

    1. I replied to this once but it seems to have disappeared into cyber space Gary. I love kippers for breakfast but cannot get hole of the real thing round here.

      Lots of snow for us at the moment. Liked the white Christmas but it can leave any time it likes.

  7. I usually eat cereal for breakfast cause I love it. Different kinds though. I usually have 3-4 kinds. Occasionally I'll get a bagel. If we go out to eat I'll have eggs....usually eggs benedict. But honestly half the time I don't realize I haven't eaten at all till I start getting dizzy and shaky. That's usually around 1pm.

I'm another one that doesn't eat breakfast ... bad habit left over from my working days when my first meal was a light snack lunch and my main meal was/is a large one in the evening (I know that's all wrong but I've done it for 40 years)! Sorry to hear that Matt's recovery isn't going too well and hope that soon changes. No snow here but Storm Eleanor is blowing a hooly and I can't sleep (although David is blissfully zzzzzing through all the wind/rain).. its 2am so I really need to get back to bed but its very noisy (indoors and out)! Suex

    1. I think all you people who miss out on breakfast are nuts Sue. We always have our main meal in the evening anyway but eat both breakfast and lunch.

      I don't remember such storms when I lived in Kent. I think that must be part of global warming. We certainly have plenty of snow at the moment. Didn't enjoy driving today.

  9. I’m sorry to hear Matt’s still unwell. I do hope he’s better soon.
    I’m a great believer in a good breakfast and we have eggs in some form or other every day - a good source of protein which vegetarians have to be more conscious of than carnivores.

      Vegans have to be even more conscious of protein sources I guess. Makes it much easier being a carnivore.
