Bowling, Hair Cuts, Mandarin, COPD,

Of course, Monday afternoon we bowled. One of our team didn't turn up and didn't bowl ahead, with the result that we lost the first game by 6 points the second game by a bigger gap and the third game by 11 points. Our missing team member is not very popular at the moment LOL. Oh well, them's the breaks I guess.

Tomorrow we both get our "ears lowered". I don't know when I last had a hair cut although I did chop a bit off myself because I just didn't have time to go. I guess I could always braid it LOL. Then we go for Matt's free lunch at the Mandarin.

Just heard a friend in NC has had by-pass surgery and also has emphysema or COPD. Didn't realise they were the same thing. Have a close friend here with the same thing. Miserable disease.

Here is a nice easy soup to make for a winter's day. You can think of me slurping Hot and Sour Soup at the Mandarin today as it's Matt's freebie for his birthday.

Quick Vietnamese Noodle Soup with Beef

Rocco DiSpirito likes to heat shirataki noodles (a low-calorie noodle made from tofu or a kind of sweet potato) in store-bought chicken broth seasoned with lime juice

3 cups chicken stock or low-sodium broth
2 cups water
1 Tbs agave syrup
1 Tbs finely grated fresh ginger
1 Tbs soy sauce
2 8-ounce packages shirataki noodles, rinsed and drained (see Note)
2 Tbs fresh lime juice, plus lime wedges, for serving
Salt and freshly ground pepper
1/2 lb trimmed beef tenderloin, very thinly sliced across the grain
1 tsp toasted sesame oil
1/2 cup chopped basil
1/4 cup chopped cilantro
1/4 cup chopped scallions
1 cup mung bean sprouts
Sriracha or other garlic-chile sauce, for serving

1. In a large saucepan, combine the chicken stock with the water, agave syrup, grated ginger and soy sauce and bring to a boil. Add the noodles and simmer over low heat for 2 minutes. Add the lime juice and season with salt and pepper.

2. Using tongs, transfer the noodles to bowls. Add the beef to the noodles and ladle the hot broth on top. Drizzle with the sesame oil and top with the basil, cilantro, scallions and bean sprouts. Serve with lime wedges and chile sauce.

  2. Did your teammate at least let you guys know they weren't coming? I usually end up cutting my own hair. Straight across the bangs when they get in my eyes, and I usually wear it in braids so I'll lop the ends off when they are in the elastics.

    1. No he didn't JoJo, but he was absent the previous week and bowled ahead so I don't know what happened.

      I used to cut my own hair but we don't pay much $15 to get it done up the road.

  4. I need a haircut ... just trying to find time to fit in an appointment, but we're off to India soon and need it done before we go.

    My mum has COPD .... emphysema is just one of the conditions that makes up COPD along with chronic bronchitis and asthma. She has been asthmatic since childhood (and she smoked for 20 years as did many of her generation). Gradually it got worse and the constant round of steroid treatments led to brittle bones and psoriasis! But she's still active and mobile and gets very good treatment from the local GP practice/hospital.

    1. That's the problem isn't it Sue, you are busier than I, but I still have to find the time. India again? Amazing.

      Glad your mum gets on so well in that case. Miserable health condition from what I can see. I guess I am your mum's generation and I smoked for at least 40 years I think.

  5. Hahahaaa....I just cut my bangs on my own as well so we did the same thing! I have to get to my hairdresser before my hair looks like raggedy Ann. Hope your friend will be ok regarding the COPD. My mom has this and I was told by the nurse that COPD covers many diseases of the respiratory tract and emphasema is one of them. My mom has emphasema caused by her 50 years of smoking and with her dementia she easily gets anxiety ridden.

    1. Well I am told I look like a new woman now LOL. I hope so too Birgit. He has to wear oxygen for 6 - 10 weeks I understand.

      I guess I am lucky not to have the problem myself.
