Saturday Recipe

This looked so good I had to share it. Besides, for those of you who aren't fanatics like I am, it makes a change from the green stuff.

 Grilled Crusted Steak With Lemon Butter

The sugar in the rub melts as the steaks cook and create a crunchy crust that is spicy sweet. The butter will mellow the peppery taste.

Lemon Butter

4 Tbs butter, softened
1 Tbs chopped fresh parsley
1 Tbs fresh lemon juice
1/4 teaspoon garlic powder

Steak

4 sirloin steaks
1/4 cup ground black pepper
1 1/2 teaspoons white pepper
1/2 teaspoon red pepper flakes
1 tsp ground coriander
1/4 cup sugar
1 Tbs salt
1 tsp garlic powder

1. Mix together butter, parsley, lemon juice and 1/4 teaspoon garlic powder.

2. Place butter mixture in plastic wrap and roll into a log shape.

3. Chill until firm.

4. Combine black pepper, white pepper, red pepper flakes, coriander, sugar, salt and garlic powder.

5. Rub spice mix into both sides of steaks.

6. Shake off excess.

7. Place steaks on a hot grill and cook for 2 minutes.

8. Turn and cook for 2 additional minutes.

9. Move steak to a cooler section of the grill and continue to cook until desired doneness.

10. Serve each steak with a slice of the lemon butter.

Servings: 4

    1. Don't have a barbecue JoJo, and not sure it would work in a cast iron pan. Might try it anyway.

    2. True. But I tell you, right now I'm pretty happy to be eating wholemeal spelt loaf. One is cooling now.

      I'm washing the shoe boxes that one held storage. Tim is mowing. It's just a real, real nice day.

  5. I am not one for sweetness with meat but that can be taken away. I am also not one for any blood in the meat...must be well done:)

    1. I like sweetness with meat so long as it is properly done Birgit, not to heavy, and in this case it is spicy.. As for rareness, we like our steak so we can slap a Band Aid on it and send it back out to the field.
