Bonus Sunday Recipe

I love Lemon Curd but haven’t made it for years, it is a long process and makes too much, apart from the sugar content. However, I have just discovered this recipe which makes small amounts in the microwave so I will be off buying lemons as soon as I can. I found the recipe on Facebook and it comes from Kitchen Explorers. If you check the link there is also a recipe for a delicious looking lemon tart.

  • Servings: 3/4 cup
Homemade Lemon Curd Recipe that can be made in 7 minutes using the microwave method. Using sugar, egg, fresh lemon juice, and butter, you can have a fresh and tangy lemon curd to spread on your favorite pastry or use as part of a filling / dessert.
Ingredients
    1/3 cup sugar
    1 egg
    1/3 cup fresh squeezed lemon juice
    3 tablespoons melted butter
    Optional: zest of one lemon



Instructions
    Whisk together the sugar and egg until smooth in a microwave safe bowl.  Gradually stir in the lemon juice, butter, and zest.
    Whisk all the ingredients until completely smooth and sauce like.
    Cook the mixture in the microwave for one minute, then in 45 second intervals.  Make sure to stir well after each cooking period, remembering to scrape the sides well.
    Total cooking time should vary but shouldn’t be more than 3-4 cycles.  The lemon curd is ready when it is thick enough to stick to the back of a spoon.
    Transfer the curd to a mason jar.  Keep in mind the curd will thicken as it cools.

    1. Well if you check the link they show using it in a pie, we used to spread it on bread or toast and it is often used for cookie filings.

  3. This is a recipe I have tried--it is perfect and oh so easy compared to standing at the stove and stirring and stirring. I used it for a tea I had when the young British Royal couple were married. Yes, I got up at 4 AM to watch the wedding. The scone recipe that goes along with it is delicious as well. Thank you for publishing it.

  5. Watching shows from the US make me want to eat some of the food so badly. Like lemon-meringue pie, cherry pie, any pie really.

    1. I like lemon meringue pie, but I am not keen on pies generally. Very often such pies here are too sweet for me anyway.
