R = Roses and Roast Beets.

I love roses, most people do, although if Matt gives me flowers I don’t want roses because they don’t last as long as other flowers such as Carnations. Where I used to live in England we had a wonderful rose garden and not only that I decorated the living room, which looked out onto the garden, with rose patterned materials and it was known as the Rose Room. Then, when I had lots to pick, I could make lots of arrangements whilst they lasted. For you viewing pleasure, here are three slightly unusual roses.

How they achieved the last picture I have no idea, is it real, is it photoshopped, I don’t know, but they are rather lovely.

I love beetroot, or beets as they are always called round here, and I thought this seemed like a good way of preparing them. I have no idea what Persian feta is, but I assume regular Greek feta can be substituted.

Roasted beetroot salad with olive oil, lemon and Persian feta

Huey’s Kitchen
Serves 4

IngredientsRoast Beetroot salad

  • 6 medium beetroot, scrubbed
  • olive oil
  • juice of 1-2 lemons
  • sea salt & freshly ground pepper
  • Persian feta, crumbled
  • 1 tbsp chopped fresh parsley

Method

  • Preheat oven to 180°C fan forced (200°C normal).
  • Roast the beetroot until tender and, when cool enough to handle, peel and cut into wedges.
  • While the beetroot is still warmish, toss with oil, lemon juice and seasonings to taste.
  • To serve, arrange the beetroot on one plate (or individual plates), scatter a generous amount of feta on top and sprinkle with parsley.

  1. Interesting combination of ingredients in that salad. I love cold beetroot but don't like it warm (hang-over from school dinners when it was served hot/diced and tasteless)!!

    1. It doesn't say you serve it warm only that you toss it whilst warm. So you should be OK there Sue.

  2. Hi Jo, I knew I would love this blog just from the title, and now the roses and a recipe from Huey's kitchen, I used love that show. Beetroot is one of my favourites hot cold, freshly grated in pita wraps, I never get tired of them. Is there really such a thing as a blue rose?

    1. Glad you enjoy my blog Ida. I really don't know if there is such a thing as a blue rose, I used to buy blue carnations but I knew they were dyed.

  3. I like roses. Mother Dragon has lots of roses in the garden but just the common colors. There is one rose that sometimes blooms pink and white and other times orange and white. Don't know why.
    Each time you mention feta cheese I wince. I so much love cheese, but it's among the forbidden food list. Too bad.

    1. Sorry about that Al, why is it forbidden? Health reasons or do dragons not eat cheese and chocolate?

      I love roses, but we have no garden any more - in England I had a wonderful rose garden too.

    2. It's health reasons actually, but from all food, cheese is the one I miss the most. I used to have wine and cheese parties every month. It was one thing I enjoyed a lot.

    1. I love beets, I often just cook them and eat them with sour cream whilst they are still warm. No good for you I suppose but there must be something similar you can eat.

  6. I love the name of your blog; it really caught my attention so I thought I better stop by for a visit. I have a girlfriend getting married in a few months and her favourite flowers are blue roses. I have never seen one as gorgeous as that one in the first picture you posted though. Oddly enough, she also loves canned beet roots! Funny coincidence!

    1. I am guessing she is ging to have blue roses in her bouquet. Canned beets are OK, but not as good as fresh. Most people in the UK didn't know you could eat beet greens either, I certainly didn't til I emigrated.

    I have only had beets cold. My grandmother used to pickle them herself, and they tasted so much better than store-bought. Like many things.

    1. In the UK I never had beets any other way than cold and in vinegar or hot and with sour cream. Found new recipes on this side of the pond.

    1. For cut flowers I actually prefer carnations, roses don't last long. But to see them in a rose garden, they are lovely.

  15. I love everything about this post from the roses to the beets. Never had much luck with our soil growing roses but we can grow some mean beets. And that salad looks yummy, I'm going to give it a try.

    Have you ever had beets with goat cheese and balsamic vinegar reduction, it's quite nice.

  16. There's something almost magical about the beauty of a rose. I'm not fond of those strange coloured ones. I prefer my roses to be deep velvet red.
