Flooding, 9/11 Memorial, Boo.

Lots of flooding in Pennsylvania yesterday, Sam Champion, meteorologist on Good Morning America, was in Wilkes BarreWilkes Barre and  standing in flood waters. Another picture showing the Susquehanna River having crested at 26 ft. above flood level. This is a result of two storms in a few days, first Irene and then Lee, dumping lots of water on the areas. We will be driving through Pennsylvania today, but well inland so shouldn’t have any problems with floods. It looks as though Marie is definitely heading for the US east coast although her forecast shows a slight northward turn.

9 11 MemorialApparently people can buy tickets to visit the 9/11 site where the twin towers used to be. The place is still a construction site but there is a lot to see for those who wish to visit on this 10th anniversary. I gather the reflecting pools  are open they are surrounded by the names of all those who died on that day.  However, I understand they are building another tower which will be even taller than the twin towers. Tell you what, I wouldn’t work there, talk about a challenge to terrorists.

Have you seen Boo? I hadn’t until yesterday on GMA. ApparentlyBoo photos of him have gone viral on Facebook and if you check on GMA there are a bunch of cute pix with captions on them. They took Boo out into Time Square and everyone knew him. No matter where they were from. What a cute puppy and so calm in the studio. He has written a book too, The Life of the World’s Cutest Dog. His owner is staying very much in the background and does not want to be seen by the media in any way.

I found these on Cooking.com so I thought they looked worth sharing and something I might well choose in the near future. One could buy a read cooked rotisserie chicken for the meat source.

Classic Chicken Fajitas

Serves 4 to 6

INGREDIENTS

5 tablespoon Wild Oats Canola Oil

1/4 cup fresh lime juice

1/2 teaspoon ground cumin

1/2 teaspoon dried cilantro

1/8 teaspoon cayenne

1 pound skinless, boneless chicken breasts, cut into thin strips

1 large red bell pepper, cut into thin strips

1 large yellow bell pepper, cut into thin strips

1 large green bell pepper, cut into thin strips

1 onion, thinly sliced

4 medium sized shallots, thinly sliced

1 garlic clove, minced

1/4 teaspoon pepper

DIRECTIONS

Mix together 2 tablespoons oil, lime juice, cumin, cilantro and cayenne in a small glass dish. Add chicken to mixture and toss to coat completely. Marinate chicken in refrigerator for 2 to 3 hours hours for extra flavour, if possible.

Over medium high heat in a wok or large pan, heat 1 tablespoon oil until very hot. Add marinated chicken and stir-fry over high heat until chicken is white throughout. Place on plate and set aside.

Add remaining 2 tablespoons oil to wok or pan and heat until very hot. Add peppers, onion, shallots and garlic; stir-fry until crisp-tender, about 5 minutes.

Return chicken and season with pepper. Toss until heated through, about 2 minutes. Serve with warm flour or corn tortillas, shredded cheese, sour cream, fresh tomatoes, jalapeños or guacamole.
